Pearse Whiskey is a celebration of Irish heritage, innovation, and craftsmanship. Founded by Dr. Pearse Lyons, descended from five generations of Dublin coopers, this award-winning whiskey is distilled at the Pearse Lyons Distillery in the heart of Dublin. Set in the restored St. James’ Church, the distillery blends centuries of tradition with modern ingenuity.

Dr. Lyons, the first Irishman to earn a Master’s in Brewing & Distilling, built a legacy of excellence through decades of global experience, from helping design the Midleton Distillery to pioneering sustainable fermentation technologies in the U.S. His passion culminated in the creation of Pearse Whiskey: a range of rich, characterful spirits including Ireland’s first new 5-Year-Old Single Malt in over 25 years.
